Sustainability Series
Available spots
Service Description
Our Field to Fork classes are part of our Sustainability Series of classes, and is focused on the produce available that season at Waystone Farm. You'll explore the farm with Deb, Waystone's farmer, and select ingredients at their seasonal peak. You'll talk with Deb about Waystone's origins and get to ask questions about the farm's operations. Then, you'll return to the farm house with your harvest and get to work with our talented chefs! We'll build a menu based on what you've gathered, and bring you step by step through creating delicious dishes that celebrate the versatile flavors of the season. We'll spend some time talking about sustainability, and the simple but meaningful changes you can implement in your daily life to reduce your impact on the environment. We'll discuss classic French techniques that you can use throughout your cooking to get restaurant quality results, no matter the menu. You'll walk away with new skills and fresh confidence to carry into your home kitchen. And, when it comes time to enjoy your creations, you'll meet Janine Sacco, our exceptional sommelier and beverage expert, who will treat you to a guided sustainable wine pairing to complement your meal.
